Food Allergy Challenges

Suzanne Teuber, MD, Associate Professor, UC Davis School of Medicine provides an overview of the main issues in food processing as it relates to food allergy. Dr. Teuber describes some of the issues that physicians deal with, as well as the need for consumer awareness. This presentation was part of a UC Division of Agriculture and Natural Resources Food Safety Workgroup, to identify areas in which the safety of California foods can be enhanced through university research and outreach.     I’ve been diagnosed with acquired angioedema from allergies to Siamese cat and my hands have been swollen for one year and my neck and face too. Prednisone helped but it would recurr and now I have swelling from stopping the Prednisone. Doctors are unable to find out what is wrong and have put me through a lot of tests over the last year…Some tests are not in normal range which puzzle them. They think I have MGUS. In the past year I have angioedema, sleep apnea, GERD, Raynauds, MRSA.
